Cannara - Cantina Colle di Rocco
The winary owns four small vineyards, a total of about one hectare of land, dedicated to the production of local wines of ancient tradition. The most important one is the Vernaccia di Cannara DOC, produced with a native variety of grape, named Cornetta: This is a very fragrant variety, quite acidic and tannic. The vinification process starts after two or three months of drying the grapes in the cellar. The wine has a residual sugar from 6 to 9%, 15.5° of alcohol, and scents of blackberries, cherries and red berries, along with a good dose of tannins and acidity. Traditionally locals used to drink his wine on Easter morning, accompanied by the typical Umbrian Cheese bread and the new salami. The Vernaccia is extraordinary with pastries, ice cream, cheeses and chocolate.
Other sweet wines are the White Passito (Malvasia and Grechetto), and the Vin Santo.
