DOC Assisi

The DOC Assisi is one of most recent among the Umbrian DOC: the procedural guideline, approved in 1997, was later revised until the last amendment, which dates back to 2005.
Like in the whole region, the cultivation of the vine is of Etruscan origins, and later developed by the Romans who made ​​the trade of the precious nectar one of their most thriving activities.
From vineyards located in grounds with favourable exposure and entering in the range of hills between 180 and 750 meters above sea level, in part in the townships of Assisi, Spello and Perugia, the following types of wine are obtained:

Assisi White
Made with Trebbiano (50-70%) and Grechetto (10-30%) grapes; other local white-grape vines can be added (maximum 40%).
Colour: pale yellow with slight greenish reflections.
Bouquet: pleasing, fresh, characteristic.
Taste: dry, fresh, slightly fruity.
Minimum alcohol content: 10,5%.
Use: aperitif or table-wine, with fish soups, chicken broth, seafood salads, fried fish, 'risotto' with pigeons.

Assisi Grechetto
Made with grapes from the vine of the same name (minimum 85%) and possibly with the addition of other local white grapes.
Colour: soft, pale yellow.
Bouquet: pleasant, fresh, characteristic bouquet.
Taste: dry, fresh, slightly bitter, fruity, harmonious.
Minimum alcohol content: 11,5%.
Use: shellfish, soft cheeses, pigeons in sauce, spaghetti 'alla Norcina', fish in general.

Assisi Red
Made with Sangiovese (50-70%) and Merlot (10-30%) grapes; other local red grapes may be added (maximum 40%).
Colour: ruby red.
Bouquet: vinous, characteristic, perfumed.
Taste: dry, full-bodied, harmonious, intense and persistent.
Minimum alcohol content: 12%.
Use: guinea fowl with wine, barbecued eel, pasta.

Assisi Rosé
Made with the same grapes as our Red wine.
Colour: more or less intense rosy.
Bouquet: vinous, delicate.
Taste: dry, fresh, harmonious.
Minimum alcohol content: 11%.
Use: crustaceans, shellfish.

Assisi Novello
Made with the same grapes as our Red wine.
Colour: ruby red, with purple reflections.
Bouquet: fruity, persistent.
Taste: harmonious, fresh, even lively.
Minimum alcohol content: 11%.
Use: omelette with whitebait fish, 'risotto' with pigeons, cold cuts.

Assisi Cabernet sauvignon (also Reserve)
Made with Cabernet Sauvignon grapes (minimum 85%); other local red grapes may be added (maximum 15%).
Colour: intense ruby ​​red tending to garnet.
Bouquet: characteristic, fragrant, intense.
Taste: dry, full-bodied, well-balanced, intense, persistent and velvety.
Minimum alcohol content: 12,50%.
Use: lamb chops, polenta with sausage ragu.

Assisi Merlot (also Reserve)
Made with Merlot (minimum 85%) grapes; other local red grapes may be added (maximum 15%). 
Colour: intense ruby ​​red, sometimes with slight glints of violet.
Bouquet: characteristic, fragrant, intense.
Taste: dry, full-bodied, velvety, intense and persistent.
Minimum alcohol content: 12,50%.
Use: roast goat, pork with broad beans, spaghetti with meat sauce (ragu).

Assisi Pinot Noir (also Reserve)
Made with Pinot Noir grapes (minimum 85%); other local red grapes may be added (maximum 15%).
Colour
: garnet red tending to purple.
Bouquet: characteristic of vine, intense and persistent.
Taste: dry, full-bodied, balanced, intense and persistent.
Minimum alcohol content: 12,50%.
Use: first courses, white and red meat, vegetable pies, cheese with truffle, stuffed saddle of lamb, Norcia ham.
